1 large eggplant cut in 1-2" pieces
2 tbsp. coconut oil
4 tbsp. Jamaican jerk seasoning
2 tsp. coconut sugar
2 tbsp. soy sauce
1 tbsp. lime juice
2 tbsp. mirin
JERK BBQ DIPPING SAUCE:
1/2 cup BBQ sauce
RESERVED MARINADE DIRECTIONS:
Combine marinade ingredients and let sit for 1-3 hours.
Place eggplant pieces on skewers. Drizzle with melted coconut oil.
Heat grill to 400 degrees. Grill eggplant skewers for 3-5 minutes per side.
JERK BBQ SAUCE:
Mix ingredients and serve with eggplant skewers
