Chocolate Fudge Cookies

Beware, these cookies may just rock your world! This recipe uses very few ingredients, it is simple, quick-to-make and produces a tender, chewy and fudgy delight. When baking these babies, please make sure to use high-quality cacao and fresh nuts (especially when it comes to walnuts which have a tendency to become rancid very quickly) so you can get the best nutritional value. They will deliver a delicious dose of heart-healthy fats, protein and antioxidants, courtesy of the almond butter, nuts and cacao. Good enough to have as part of a healthy Breakfast! So go ahead, indulge!

INGREDIENTS
1/2 cup almond meal
1/4 cup raw cacao powder
1/2 tsp baking powder
1/2 cup pure maple syrup
1/2 cup all natural almond butter, crunchy
1 tsp pure madagascar vanilla extract
1/2 cup dark chocolate chips, dairy-free
1/4 cup walnuts, finely chopped

INSTRUCTIONS
Preheat oven to 350F.
Lay some parchment paper on a large baking sheet.
Combine all ingredients, except chocolate chips and walnuts, and mix well. Then add in the chips and nuts.
Using a small spoon, dipped in warm water, scoop out the dough and place on parchment-lined baking sheet.
Bake for 12 minutes.
Let cool and enjoy.
Freeze very well.
